How do people interact with the enviroment living on plains/plateaus?

I need to know, Ima doing a school project.How do people interact with the enviroment living on plains/plateaus?
Most likely its farming. They extract all the nutrients over time with poor farming techniques, then others come inand suck all the water dry.
